What's a refractometer?

Refractometers are optical instruments used for measuring concentrations of liquids. They’re used to measure sugar solutions, brine, engine coolant and other liquids. The main component of a refractometer is the prism. A few drops of liquid are placed on the prism. The clear lid is closed, creating a thin layer of water across the prism. When light enters the liquid layer, it changes direction. This is called a refraction. The refractometer measures the amount of light shift, called the angle of refraction. This refraction is converted to a useful unit of measure. With saltwater refractometer, the units are specific gravity and salinity. By looking through the eyepiece, you’ll see the measurement scale indicating salinity and specific gravity.

So how to use a honey refractometer?

To take a measurement with a handheld analog refractometer, follow these steps and read the manufacturer's instructions:

1.Calibrate the refractometer with a standard solution before use. Since the reading will be affected by temperature changes, it's best to calibrate at the temperature of the test environment. If this is not possible, correction charts may be used. Some refractometers have automatic temperature correction (ATC), a feature that allows the instrument to automatically correct for temperature differences.

2.Place a small amount of liquid (usually 2–5 drops) on the prism, and secure the cover plate. This will evenly distribute the liquid on the prism.

3.Point the prism end of the refractometer toward a light source and focus the eyepiece until the scale is clearly visible.

4.Read the scale value at the point where the dark and light portions meet.

Refractometer Maintenance

Although it is quite simple, a refractometer is a delicate instrument that will easily malfunction if you don’t maintain it properly. It will last for years if you:

  • Store it in a cold, dry, and dark place
  • Ensure temperature fluctuations don’t exceed 5 F (15 C)
  • Clean it thoroughly after every use
  • Calibrate it regularly
  • Handle with care

Summary

A refractometer is a useful optical device that determines the sugar level in a liquid by refracting light through a glass prism. It is used by mass-production breweries but also by homebrewers.

The portable variant is not entirely reliable because it is sensitive to temperature. Maintain your device regularly and calibrate it before measuring to ensure accurate data.
